Teriyaki Pork (or whatever meat you want) Stirfry (6 servings, 30 min or less)
~2/3 Cup soy sauce
~1/4 Cup packed brown sugar
~1 tbsp cornstarch - having this doesn't really make much of a difference in taste and the oil further down makes a nice texture for the sauce)
~2 tsp peeled, finely chopped fresh gingerroot
~2 garlic cloves, pressed
~1/4 tsp crushed red pepper flakes
~1 lb boneless pork loins cut up (or you can substitute venison. The gingerroot really covers up any gamey taste. I've also used beef and it works well)
~2 Cups brown rice
~1 medium red bell pepper
~6 oz fresh snow peas
~1 bunch of green onions cut up
~1 tsp sesame oil (I usually use more than this because my Wok heats up really fast and I need the extra oil, especially with the venison)
~1 can of bamboo shoots drained.
** For the veggies I will sometimes use a frozen oriental stirfry mix.
1. Combine the soy sauce, brown sugar and cornstarch (if desired) and whisk until blended. Add the gingerroot already chopped, the pressed garlic and pepper flakes.
2. Cut the meat into thick strips or kabob squares and add to the soy sauce mixture above. Toss to coat the meat, cover and let marinade for 15 minutes.
** When I am using venison, I will boil the meat in the marinade because Deer meat can get tough very fast. The ginger and garlic boiled into the meat will overtake any gamey flavors and you will have a much more tender and flavorful meat.
3. Cook rice, cut veggies
4. Heat 1/2 (I use more) tsp of sesame oil in Wok (what I use because the amount of veggies/rice/meat is too large for my cast iron pans) or stirfry pan. Remove meat from marinade and put into pan to cook, reserving the marinade. Stirfry for 1-2 minutes or until no longer pink. Remove from skillet/pan and keep warm
**If rice is done you can add a little oil and fry the rice. This gives a great texture. Remove rice, or keep it with veggies.
5. Heat remaining oil in the same skillet/pan and add the veggies. Stir fry for 2-3 minutes or until crisp/tender. Return meat to skillet/pan and add the rest of the marinade. Bring it all to a boil. Cook and stir for 1 minute or until sauce is thickened.
